Summer Time Greek Salad

Ingredients

1-pint cherry tomatoes, halved
1 cucumber, sliced ¼ inch thick
½ red onion, half-rounds
½ cup feta cheese, cut in cubes
¼ cup Kalamata olives, pitted
6 tbsp Corto TRULY 100% extra virgin olive oil
2 tbsp fresh lemon juice
½ tbsp garlic, chopped
1 tsp red wine vinegar
½ tsp dried oregano

Directions

  1. Whisk together the Corto olive oil, lemon juice, garlic, red wine vinegar, and oregano. Set aside.
  2. Combine the tomatoes, cucumber, and onion into a large bowl
  3. Pour the vinaigrette over the salad, then gently mix in the feta and olives
  4. Set aside for 20 minutes to let the flavors develop, then serve.
